Just a simply wonderful Bread Pudding! Don't toss that leftover bread, or better yet, croissants into the trash. Take a few ingredients, plus pure vanilla extract, and you'll have a warm, delicious dessert.
Heat oven to 345°F. Place an oven-safe dish or aluminum pan filled with water on a separate rack while the oven heats — this keeps the pudding moist.
Break up or cut the bread into cubes and place in a large mixing bowl.
In a separate bowl mix together the White Sugar, Brown Sugar, Eggs, Vanilla Extract, Cinnamon, Nutmeg, Butter, and Half-and-Half. Hand blend or use a mixer until well combined.
Pour the mixture over the bread and fold together until completely combined. Set aside for about 10 minutes to allow the bread to absorb the custard.
Butter or spray a casserole dish — preferably glass or ceramic. Pour the bread pudding mixture into the dish using a spatula, but do not smash down.
Place on a separate rack in the preheated oven and cook for approximately 20 minutes. Remove from oven and gently stir with a large spoon. Melt the reserved butter and pour all over the pudding, then sprinkle the reserved sugar and cinnamon mixture over the top. Return to oven.
Cook another 40–50 minutes until the top is firmed up and browned, and a knife inserted in the center comes out clean.
Set aside for about 10–15 minutes to set up, then serve and enjoy!
