Oven Roasted Ribs

Ribs are so inexpensive and don't always have to be BBQ'd — why not braise them, add your favorite vegetables, and relax?

Ingredients

  • 2 stalks of celery, chopped
  • 2 whole carrots, peeled and chopped
  • ½ large Vidalia onion, chopped
  • 3 Tbsp butter
  • 3 Tbsp olive oil
  • 1 Tbsp granulated onion powder
  • 1 Tbsp granulated garlic powder
  • 1 Tbsp parsley
  • 2 Tbsp Knorr Chicken Stock (add to 2 cups water) or 2 cups prepared chicken broth
  • 1 Tbsp Italian seasoning
  • 1 Tsp seasoning salt
  • 1 Tsp coriander
  • 1 Tsp sugar
  • 3–4 Yukon Gold potatoes, washed and quartered or cubed
  • 1 full slab baby back ribs (membrane removed, cut on each bone)
  • 1 Tsp cornstarch added to 1 cup water

Method

In a large mixing bowl combine the ribs, onion powder, garlic powder, parsley, Italian seasoning, coriander, olive oil, sugar, and seasoning salt. Mix together well, then place in a large aluminum pan.

Bake at 340°F for about 45 minutes to 1 hour, or until the ribs begin to brown. Then add 1 cup of chicken stock, cover, and cook for another hour.

Uncover the ribs and add the second cup of chicken stock along with the onion, celery, potatoes, carrots, and butter. Recover the pan.

Bake another 45 minutes to 1 hour until the potatoes and carrots are soft.

Finally add the cornstarch mixed with ½ cup of water and stir. It should thicken slightly — just enough to coat your spoon, but not become gravy.
