I like nicely seasoned pork tenderloin, do you? I also like sweet potatoes, cinnamon, nutmeg, butter, and brown sugar. I told the family what I was planning, and after they tried it, there were nothing but smiles.
In a large pot of water (about 5 cups), add the sweet potatoes, butter, nutmeg, cinnamon, vanilla extract, brown sugar, and salt. Bring to a medium boil and cook until tender but not falling apart. Move off heat and retain all liquid.
In a large mixing bowl, add the pork, onion powder, garlic powder, pepper, seasoning salt, and olive oil. Stir and set aside to marinate.
In a large pan or electric skillet with a lid, heat to low-medium and add approximately 3 Tbsp of olive or cooking oil.
Once heated, add the pork mixture and onion. Cook slowly until browned, then add ½ cup of chicken stock and cover. Cook for about 30 minutes, continuing to stir — the pork should be fork tender.
Add the cooked sweet potatoes to the cooked pork, along with 1 and ½ cups of the sweet potato cooking juices. Stir slowly so as not to break up the potatoes.
Keep on low-medium heat. Check taste and adjust seasonings and/or add more sweet potato juices as needed.
Serve over a pot of parboiled rice for a complete, satisfying family meal.
